LEVIN
Harvest 2005
Harvest
has begun in Bourré ! Our team has been manually picking
the grapes for two weeks with another two weeks yet to come.
This has come as a surprise to us since we originally planned
to begin harvest later this month. However, due to our good
vineyard practices and especially the manual leaf plucking,
our grapes have already achieved the acidity and sugar levels
we desire. With cool and sunny days here, the weather has
turned into excellent conditions for the grapes to fully ripen
and for our pickers to work in.
The grapes
we have seen over the past two weeks have been of excellent
quality. We have been pressing continuously each day, either
using whole bunch presses or allowing the grapes to sit in
the juices for a few hours, a process known as cold soak maceration.
The winery
has also been expanding with the addition of our two new 30,000
liters tanks, which we call Bertha and Betty. As harvest continues
to progress we again thank our employees, both inside the
winery and out in the vineyards for their hard work.

Leaf Plucking Finishes
For three
weeks, seasonal employees at the LEVIN
winery have been working day after day in the vineyards. At
vineyards in Choussy, Oisly, Bourré and other areas,
the crew has been diligently leaf plucking and thinning out
the grape clusters, a process known as "green harvest".
This work involves hard work and long hours, as well as constant
concentration on their task.
The vines
and grapes benefit from this by avoiding rot and unnecessary
competition with other leaves and clusters. The result is
that we can expect only healthy, tasty grapes are harvested
and turned into LEVIN Sauvignon Blanc
this September.
The LEVIN
staff thanks the leaf pluckers for their hard work and great
attitudes. We look forward to seeing many of them again at
harvest.
